How To Make a Healthy (and amazing) Pumpkin Spice Latte

Want to drink a cup of coffee with the sugar equivalent to 5 Krispy Kreme donuts? Me neither.

I was recently in the airport when I overheard the following conversation:

– “Ugh, our flight’s delayed – wanna get Starbucks? I’m craving PSL.”

– “Omigod, tell me about it – I’ve spent like over $30 this week just on coffee”

– “Me too! I’m spending so much on coffee and then I’m like, still soooo tired”

Yup, lots of sugar CAN make you tired.

Especially the 50 grams of sugar that Starbucks puts in their Pumpkin Spice Lattes (not to mention, high fructose corn syrup, ewww).

Now there’s nothing wrong with some sweet treats here and there but why not try making your own PSL at home? It’s super easy (trust me). “But I want it on my coffee break at work” you say? Make up a batch at home for several days in advance and take it to work with you in a leak-proof coffee mug. You’ll save both money and calories and you know what? You just might like this version better ;)

Healthy Pumpkin Spice Latte Recipe (can be adapted for Keto as well)

Makes 2 servings, double the recipe for more lattes!

– 1 cup of full fat coconut milk (can also do half almond milk for less creaminess)

– 2 heaping TBSPs of pumpkin puree (not to be confused with pumpkin pie filling, which is loaded with sugar) I use this brand

– 1 full tsp of pumpkin pie spice

– 2 large cups of very hot coffee (or 2-3 shots of espresso)

– Pure maple syrup (the real kind, not Aunt Jemima please), at least 1/3 cup (or 6 TBSP) if you want it as sweet as Starbucks, less if you need less sweetness. You can also use coconut sugar if you prefer, but maple syrup gives more of that authentic PSL taste. If you are doing Keto, just substitute Stevia or your favorite sweetener.

– 2 teaspoons of pure vanilla extract (this one by Nielsen-Massey is amazing!)

Directions: Mix all ingredients in blender or hand mixer (if you’re blender isn’t heat adapted) for about 60 seconds and enjoy! Drink right away or keep in the fridge for up to 5 days.

Optional:

– For even more creaminess and added nutrition, add some collagen powder! This elevates this coffee to not only a treat but a protein-packed snack with immune and skin boosting bonuses. Note: if adding collagen, don’t add it to your “in advance” batch, just add it to your daily cup.
